Dreaming of summer

I love summer for the food- it's fresh and fruity and really healthy so this week I have tried to get rid of my winter illness by embracing summer to made some really yummy food and drinks- these are two yummy things that I made!



A really fresh and jam packed salad always makes me feel so so much healthier! I added some grilled ingredients and cooked potatoes so it felt more filling which is a good way to tailor a summer salad to make it wintery.

Ingredients
Halloumi (grilled)
Cooked New Potatoes 
Apple slices
Olives
Mushrooms (grilled)
Spring Onions
Walnuts
Lettuce
Croutons
Tomatoes
A Pepper
Parsley

Dressing
Balsamic Vinegar
Chili Oil/ Flakes
Extra Virgin Olive Oil
Salt and Pepper

Smoothies are also a really important thing for making me feel healthier and more summery! This one is a really simple one but uses frozen fruit which is a really clever way to make a chilled and yummy smoothie without your fruit ever going off!




Throw all your fruit into a blender with milk and sometimes a pinch of sugar to offset any overly sour fruit and enjoy! (Yogurt is also a good thing to add to smoothies, however I found that the frozen fruit made the smoothie really thick so using milk instead loosened it up)



I also found that eating the frozen fruit on its own is a really yummy and healthy snack!
